INGREDIENTS:
1/2 cup unsweetened plain yogurt (sub cashew yogurt for vegan)
2 large ripe bananas (about 1 cup mashed)
1 egg (sub 1 tablespoon of flax meal with 3 tablespoons of water for vegan)
1/4 pure maple syrup
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup almond flour
1/2 cup unsweetened dark cocoa powder
2 teaspoons baking powder
1/2 cup dark chocolate chips (optional)
DIRECTIONS:
Set your oven to 350 degrees Farenheit (176 Celcius). Prep your 9x5” pan with oil, butter, or parchment paper.
In a large mixing bowl, take your perfectly ripe bananas and mash them thoroughly until you don’t see any noticeable big pieces remaining. Next, follow this step by adding your wet ingredients into the bowl and mixing everything well until all components are blended seamlessly. (yogurt, egg, pure maple syrup, vanilla extract)
Next add in the cocoa powder and baking powder, giving it a good mix.
Now add in your all-purpose flour and almond flour and blend blend blend.
Make sure your batter is blended and that any dry ingredients that may have become stuck to the bottom of the bowl are mixed in.
Optional: Add dark chocolate chips to the batter, folding it in ensuring it is spread evenly throughout.
Pour your batter into your prepped 9x5” pan and pop it in the oven for 50 minutes! If it seems too soft, keep it in for another 5 minutes or until it has a more firm texture and passes the prick test.
