Guilt-Free Delicious No Bake Cookies

When I need a quick chocolate cookie fix, this recipe does the trick. The ingredients are clean and healthy, so I don’t feel guilty if my kids (or I) have a couple of them.

They are rich in flavor and have a melt-in-your-mouth texture about them, thanks to the coconut oil and almond butter. If you don’t like almond butter, swap it out with peanut butter or your favorite nut butter; it will still be so tasty

  1. Melt the coconut oil in a small saucepan on medium heat.

  2. Add the maple syrup and almond butter and mix until well blended.

  3. Add the cacao powder and mix stir well for a couple of minutes.

  4. Once everything is blended well, remove the pan from heat and add the rolled oats. Mix well, ensuring all of the oats are covered in the sauce.

  5. With a spoon or a scoop, form your cookies on a lined cookie sheet. Be careful because it will be hot!

  6. Place your tray in the freezer for around 20 minutes or until the cookies have hardened.

    *Tip: Store your cookies in the fridge to avoid melting!

  • 2 Tbsp cacao powder (or unsweeted cocoa powder)
